Home-made Pesto

This is one of the quickest, tastiest & cheapest meals to prepare. (Fits all my criteria!) I have heaps of basil growing in the veggie patch. The recipe is from Marie Claire Comfort food. Just pick 2 cups loosely packed basil leaves, add 1 large handful flat-leaf italian parsley, 4 tbspsns grated parmesan cheese, 3 tbspns pine nuts (toasted if you have time), half clove garlic and put all into food processor. Add 5 fl oz/150ml olive oil and process until a chunky paste forms. It makes about a cup full of pesto, so I use it all with a full 500g pack of spaghetti (males are big eaters here!)
